Elderflower Cordial

Ingredients

For 1 litre

4-5 dl caster sugar

1 litre of water

1 ml ascorbic acid – also known as vitamin C powder. 

20 bunches of elderflowers

1 lemon

Instructions

Shake the elderflowers well and help any insects find their way to a new home. Then rinse the flowers under lukewarm water. Pinch the stems and keep only the flower clusters.

Boil water in a saucepan and stir in the sugar until it dissolves. Add and stir in the ascorbic acid. Put the elderflowers in a saucepan and place sliced lemon on top. Pour the hot sugar water over the flowers. Cover with a lid and leave to cool for 1-2 days. (If you use cool water, it needs to stand for 3 days).

 

Strain the juice through a fine strainer and pour into a glass bottle. Store your elderflower cordial in the fridge. 

 

Serve the juice by mixing it with just enough water.
