Mushroom Cream Cheese Spread

Soak the mushrooms in lukewarm water for approximately 30 minutes. Dispose of the liquid and put the mushrooms in a hot, dry skillet. Fry until mushrooms are dry, then add butter and fry for quite a while on low heat. Add salt, pepper, and finely chopped parsley leaves when the mushrooms are golden. Stir and add the cream, let the mix simmer on low heat. Set aside to cool off, then mix it with the cream cheese, preferably the day before serving.

 

This is a delicious spread for a nice bread, crackers, or crisp bread. You can also use it as stuffing for chicken breasts, fillets of white fish or for beef roulade. Or just as an extra seasoning to any of your favourite dishes.
