Scallop and Prawn poke bowl

Ingredients

Serves 2

6 small or 4 large scallops, cleaned and roe removed

6 mediu prawns, head and shell removed

1/3 - 1/2 almost ripe mangos

1/4 pomgegranate, seeds removed

1/2 red onion, sliced finely

1 large handful baby spinach leaves

a handful of sprouts e.g. onion, beetroot, cress, alfalfa, radish

8 ripe blackberries

juice from 1/2 lemon

1/2 pink grapefruit

1 tbsp rapeseed oil

sea salt

Season the shellfish with salt and lemon juice from 1/2 lemon and store in one of the SnapBox Ovals. Place the baby spinach in the other SnapBox Oval. Store the blackberries and sprouts in the two SnapBox Originals. Place all the SnapBoxes and remaining ingredients in a coolers bag with ice packs for transport.

 

Prepare your fruit using the Chopping board and FireKnife. Light the camping stove using your FireKnife. Place the pan on the stove, and add the rapeseed oil. When hot, add the scallops to start and cook for 1 minute per side. Remove to the MealKit plate and cover. Cook the prawns for 1 minute per side. Slice the grapefruit, and add the juice to the pan. Cook the prawns for another minute and add the scallops. Cook for another minute, turn off the heat and remove to the StackPlate. Add all the ingredients to the StackBowls and serve.
