 Three Bite Pizza


Serves 2-4 people

Pizza dough: 
(alternatively, bring a ready-made dough) 
14-15dl (1 kg) tipo - a Swedish spring wheat (can be replaced with flour) 
7 dl (700 g) water 
20 g salt, sea salt 
10 g organic yeast 
½ jar ajvar relish 
1 eggplant, one slice per pizza 
1 mozzarella 
1 sage leaf per pizza 
Olive oil 
Salt, pepper


How to:

Pizza dough 

Mix the dough and let it rest for two hours. Knead and place the dough in a MealKit. Let rise overnight. Ready to bake. 



Slice eggplant into 1 cm-thick slices. Remove liquid by sprinkling each slice with salt in a StackPlate, for example. Let sit for about 10- 15 minutes. Dry the slices and fry them in olive oil. Remove and keep warm. Fry the sage in olive oil, then remove from heat and keep warm. 


Roll out and cut the dough into bite sized pieces. Spread them on a griddle or a frying pan. When they are finished baking on one side, flip the pieces and spread each with ajvar relish. Add the slice of eggplant, sage, and top with mozzarella cheese. Sprinkle with pepperEatEnjoy. 



  • Vary your pizzas according to the season and taste. 
  • Try using tortillas instead of pizza dough. 
  • Replace the sage with seasonal herbs like wild garlic, ground elder, dandelion, chives…
