Lilac cordial

For 1 litre

10 lilac flower blossoms

1 litre of water

1 1/2 organic lemon in slices

1/2 cup sweetener - agave syrup, coconut sugar or similar.

Place the lilac flowers on a white towel for an hour so that any small animals can crawl out.  Then rinse the flowers in cold water and remove twigs and other things that should not be included and place into a pot. Boil a litre of water and pour over the flowers. Add the sliced lemons and sweeten to taste. Leave covered with a towel or lid for two days. 

Strain the juice and pour into a clean bottle. Store in the refrigerator. It will last for around a week. Excellent for freezing too!
