Rhubarb and Lemon Cordial


Serves 4

1.5 kg Rhubarb

1 Lemon – zest and juice

1 litre water

500g sugar to sweeten


Wash the rhubarb and slice, place into pan. Add the zest of a lemon and the juice. Add sugar – yes there’s a lot of sugar but it’s necessary and will be diluted with water.


Cover in water and bring to the boil. Simmer until the rhubarb is falling apart. 10-15mins. Take off the heat and leave to cool.


Pour mixture through a strainer, separating the fruit and collecting the cordial. Pour cordial into a bottle and store in the fridge. Keep the cordial in the fridge for up to 3 weeks. Freeze for longer. Mix the refreshingly fruity cordial with water and enjoy!!
