Watermelon and Strawberry Gazpacho

Ingredients

Serves 4

1 kg watermelon, rind removed and chopped roughly

10 large ripe strawberries, stems removed

10 mint leaves

Instructions

Evening before
Make the gazpacho in a jug blender. Add all ingredients to the jug and blend on high until smooth. Pour into a 1.5 litre container and chill overnight in the fridge.
Optional:
Store decoration toppings in SnapBoxes for serving at the beach.


Outnic day
In the morning, decant the chilled gazpacho into an insulated bottle to keep cool at the beach/forest. NB; Shake well before serving as the watermelon juice and fibre can separate - this is totally normal. Serve in a StackBowl with Sporks, or ReStraws or serve in glasses with the Titanium kits. Decorate with strawberry slices, watermelon cubes and mint.
