Salmon and Lemon
Ingredients
Serves 2 people
200 g / 7 oz. of your favorite pasta
50 g / 1/8 lb. of fresh sugar snap peas
onion finely chopped
200 g / 7 oz. smoked salmon in slices
3 tbsp lemon juice
20 cl / 13 tbsp cream
1 tbsp lemon peel
Salt & Pepper
Oil for frying
Instructions
How to:
Boil the pasta. Cut the peas into strips and add them when there is a minute of boiling time left. Peel the onion and chop it into small pieces. Cut the salmon into pieces the size of a thumbnail. Fry the onion in olive oil until it is soft and shiny. Add lemon peel, lemon juice, salt and pepper. Add the cream and cook for another 2 minutes. Finally, add the salmon, give it a quick stir, and you are ready to serve with the pasta.
Tip! This is another of our favorites. For a change we did not test this one on a kayaking trip. In fact, we also go biking, taking our tent and sleeping bags for weekend rides. A great excuse for some outdoor cooking! :-)
