Apple Soup with "Santa Pancakes"
Ingredients
Serves 2 people
Apple Soup:
2 large or 4 small apples
4 dl apple juice or cider
0,5 dl unrefined sugar
1 vanilla bean
2 large sage leaves
1 lemon
Santa Pancakes:
1 egg
1,5 dl unrefined sugar
2,5 dl wheat flour
0,5 dl milk
1 tsp baking soda
1 ml ground cardamom
20 g butter
2 tbsp granulated sugar
1 tsp cinnamon
sea salt
Instructions
Soup: Finely dice the apples, cut open and scrape the vanilla bean. Bring the apple juice, apple dice, vanilla (bean and caviar) and half of the sugar to a boil. Taste and add squeezed lemon and more sugar until you find the flavor fabulous.
Santa Pancakes: Mix egg and sugar. Add milk and flour mixed with baking soda and cardamom. Heat a pan over a medium heat and add butter. Pour in Sporkfuls of pancake batter and watch them turn into yummy little pancakes. Cook and flip the pancakes until both sides are golden brown. Put them on stack plates or MealKit lids and top with cinnamon, granulated sugar, sea salt and sage.
Serve hot and enjoy!
Tip!
- Replace the vanilla with a cinnamon stick or simply use both. Substitute the sage with fresh mint.
