Veggie Pasta

Ingredients

Serves 2 people

200 g / 7 oz. pasta  
10 pieces of dried tomato in olive oil  
250 g / 9 oz. Greek yoghurt  
2 tsp tomato paste  
1/2 tsp sugar  
1 big red pepper  
1 zucchini  
1 clove of garlic  
1 onion  
5 cl /3-4 tbsp olive oil  
1/2 tsp dried rosemary  
Salt & Pepper

Instructions

How to:

Start by cooking the pasta. Meanwhile, cut the tomatoes into thin slices. Mix tomatoes, yoghurt, tomato paste. Add sugar, salt and pepper to your taste. Cut the vegetables into slices and fry them in olive oil. Add garlic and rosemary. Finish with some salt and pepper. By now the pasta should be cooked and ready to serve. Just add the fried vegetables and a big spoonful of the yoghurt mix. 

Tip! It's always nice to bring some fresh vegetables on your kayaking trip. However, plan to cook them during the first few days if you are on a summer trip. If you feel like having vegetables at the end of a longer trip, you can always dry them beforehand.
